Guthiddai is an ancient name of unknown origin. It refers to the wide valley that extends eastward from Oliena. Here you discover, surrounded by vineyards and olive groves, the Agriturismo Guthidday, an idyllic estate, which has developed harmoniously with the surrounding landscape of pastures, vines and olive trees since the early fifties.

The center of the delightful country estate is a picturesque courtyard combining rustic elegance with beautiful flower arrangements, typical of the traditional Oliena culture. Nothing disturbs the perfect harmony of the architectural design. Guthiddai agriturismo provides a womderful dining experience with 2 dining rooms as well as 10 cosy and comfortable rooms, each equipped with private bathroom and balcony. Every room is surrounded by vegetable and flower beds, orchards, vineyards and olive groves. The family takes meticulous care to ensure the highest bio-quality of all their products thus creating the very special country style atmosphere of the agriturismo. The territory of Oliena

On the east side of the Corrasi limestone massif, face to face with Sa preda 'and Mugrones, (the mouflon stone), in the fertile Guthiddai valley, one finds one of the most famous karst sources of Europe, Su Gologone., La fonte is the main resurgence of a vast karst system located in Sardinia, in the area of ??Supramonte di Oliena , in the Province of Nuoro. From the source, which is located in the territory of the municipality of Oliena, there is a short stream that feeds the river Cedrino. The water emerges from a crack in the limestone rock, which enters the subsoil to the depth currently explored by 107-meter speleologists. The maximum lean flow of the source was detected in 1995 in 60 liters per second while the flow rate of the flood is estimated at 8,000 liters [1]. With an average flow of 300 liters of water per second is the most important source of Sardinia [2]. With a decree of the Defense of the Environment of Sardinia, (number 845 of 12 May 1998) was established as a natural monument [1]. The spring, only partially explored, feeds the Cedrino river. The source has always represented an important water resource, which gives drinking water to the municipalities of Oliena ,, Dorgali, and to the Baronia. After the source, a few kilometers, the ancient, steep road that leads to the valley of Lanaitho, fully justifies the name of the pass: "Su Passu Malu", (Bad Pass), beyond which overhang the monumental basalts of Ganagosula, which delimit the Gollei plateau., The valley of Lanaitho, however, a place with beautiful and evocative features, with interesting caves and visited by speleological equipment such as those of Sa ohe, Su ventu, Su mugrone, and Helihes Artas,, created environments favorable to human settlement down from the Paleolithic superior, as has been documented in the Corbeddu Cave, where the oldest human remains of Sardinia were found, and the nuraghic village of Sa sedda and sos carros, where an important sacred source was found.

Gastronomy

The kitchen offers only local products that for the most part come from the company's crops. It is a gastronomy that derives from the combination of the agricultural and pastoral economy and that translates into simple, genuine and tasty dishes. Olives, cheeses (pecorino cheese, ricotta and fresh curd) and cured meats (sausage, local ham, pancetta, coppa) are the traditional antipasto. Accompanied by the famous Pane carasau, breadcrumbs thin and crispy .. Among the first courses are fresh pasta, Ravioli (stuffed with cheese or ricotta and chard), the Maccarrones de busa (a sort of bucatini) and is Maccarrones de bocciu (gnocchetti). On Pane Frattau is a first course with carasau bread dipped in hot water and layered in layers with tomato sauce, pecorino cheese and a poached egg. Turning to the main courses, we have the Porcetto cooked on the spit, roasts (or stewed cooking) of Lamb, Capretto, Veal and Wild Boar .. The Sheep is cooked in various ways, roasted, stewed, but the house specialty is Sheep in Coat, the meat is boiled with potatoes, onions and vegetables and served with carasau bread soaked in the cooking broth. All dishes are cooked with our own extra virgin olive oil which makes our dishes pleasant and easy to digest. The Desserts, many of them based on cheese, start with the Sevada, a disc of puff pastry filled with fresh cheese flavored with lemon, fried and covered with honey. S'Aranciada is instead prepared with candied orange peel, honey and toasted almond flakes .. For the occasion of All Saints prepare the Papassinos, for Easter Sas Casadinas, and the great variety of almond sweets typical of this area. And finally the Cannonau wine of our production .. Customers who will have the pleasure of staying at our company will be able to taste the specialties of the house.
